Pea and Mint Gazpacho Soup

Chilled pea and mint soup. Surprisingly pea-y and delicious


We all loved this little seasonal pre-starter.

And you know me and my colour obsession, blame ADHD, I do love a pea green!


And it’s a handy vegan, gluten-free, everyone pleaser….UNLESS you hate peas.


This is how you do it


  1. In a pan soften an onion, (or spring onions, or spring onion tops) with some garlic

  2. Add 900g frozen peas, from frozen or defrosted, makes no odds

  3. Pour in veg stock to cover peas about 750ml and simmer until soft

  4. Add mint leaves, you can add more later if you want to up the minty-ness

  5. Season salt and pepper

  6. Whizz up in blender thingy or use a stick blender

  7. Add more stock if it’s too thick

  8. Squeeze of lime or lemon to your taste

  9. Chill until cold


Serve in little glasses or tea cups with a dollop of creme fraiche and whole fresh pea pod.

**Double pod the plant based so there’s no confusing the vegan option!


Add other herbs like tarragon, lemon verbena, or some fennel fronds. Whatever you’ve got in the fridge, try it.
